Recipe Thursday

For this weeks recipe I'm going to post a couple of family favorites one from my mom's side and one from my husband's side.



INDIAN FRY BREAD

4 cups flour
5 teaspoons baking powder
1 teaspoon salt
2 teaspoons oil
2 1/2 cups water
vegetable oil (for frying)
Mix flour, baking powder & salt. Gradually stir in oil & water to make a soft dough. Stir until dough is smooth & shiny.
Cover, set aside 30 minutes. Shape dough into 16 balls the size of an egg.
Roll out on lightly floured board 1/2 inch thick. Heat oil 3 inches deep until hot.
Fry dough one at a time, turning with a fork until puffy & golden brown. Drain on paper towels.

Serve with honey, powdered sugar, or any fruit pie filling


POPOVERS

Ingredients:
4 eggs
2 cup milk
2 cup flour
1 teaspoon salt

Directions:
Grease 12 large muffin tin cups or 12 custard cups. Break the eggs into a bowl and beat well. Add the milk, flour, and salt, and beat until just blended. Fill the muffin tin cups or custard cups three-quarters full with the batter. Place the pan on the center rack in the oven. Set the oven at 450 degrees and turn it on. Bake for 30 minutes without opening the oven door.

Serve the popovers hot with butter, jam, syrup, or honey.

Yield: 12 servings
Preparation time: 15 minutes
Cooking time: 30 minutes
Ease of preparation: easy

My husband has been begging for me to make popovers for some time now. So thank you for the recipe. Reminded me to make them for him. They turned out ok. Still figuring out this oven. Practice makes perfect.

Popovers are my favorite! I have not made them for a while! Might have to try them tonight!
